Salmon & Herb Skewers

A healthy light dish.

  • 4 Salmon Fillets
  • Parsley Leaves
  • Mint Leaves
  • 1 Lemon
  • 1 Spring Onion
  • 1 Garlic Clove
  • 2 tbsp Olive Oil
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  1. Cut salmon, red and green bell pepper into small pieces, and the lemon into thin slices and add these to the skewer stick, alternating the pieces.

  2. Chop parsley, mint, onion and garlic until finely chopped.

  3. If using a pan, heat the olive oil in the pan, coat the skewers with some of the herbs and place in the pan. If using a grill, preheat to 180degrees celsius, coat skewers with the herbs, drizzle with oil and place in grill for 15 mins or until light brown.
