Sweet Potato and Kale Vegetable Soup
A healthy dish of sweet potatoes and vegetables and peppers.
- 1 Bag Kale
- 5 Pieces Cow Leg
- 3 Pieces Tripe
- 1 Tin Plum Tomato
- 1 Red Bell Pepper
- 1 Scotch Bonnet
- 1 Onion
- 1 Knorr Cube
- 1 tbsp Palm Oil
- 6 Sweet Potatoes
- 1 Fish (Dried and Smoked)
Blend the Plum, Pepper, Scotch bonnet and half of the Onion in a food processor.
Wash and season the meats, add seasoning as required and put to boil.
Wash and boil the fish for about 15 mins to soften.
Put another pot to boil, pour palm oil and let it heat up.
Once hot, add the second half of the onion and then add the blended peppers. Add the 2 Knorr seasoning and leave to cook until the sauce is thick with very little water left.
Once cooked, add the meat and fish and let it cook some more.
Add the vegetables, stir well and turn off the heat.
Boil the sweet potatoes until soft and serve.
